Coconut Palm Sugar is a natural, unprocessed sweetener that comes from the blossoms of coconut trees. It is one of the most productive and widespread plants in the world, Cocos nucifera grows on islands and coastal areas in most tropical climates. Our coconut sugar comes from Java - an island in Indonesia, where high humidity and abundant rainfall provide excellent growing conditions. Unlike other sugar products that are grown as mono plants, coconut trees grow in various, wildlife-supporting environments that benefit the ecosystem. According to the Food and Agriculture Organization of the United Nations, coconut sugar is one of the most sustainable sweeteners in the world, producing up to 75 percent more sugar per acre than cane sugar. Typically, the coconut tree grows to a height of about 30 meters and can have a lifespan of up to 80 years. Unlike most fruit-bearing plants, palms produce year-round and are always in season. The tip of a blooming flower is cut and the nutrient-rich sap that flows is collected. Each tree can give an average of two liters of sap per day and once a coconut tree is tapped, the sap will flow continuously for the next 20 years. Today, its popularity extends far beyond and is widely recognized as a healthy, nutritious and all-natural sugar substitute. PROCESSING To catch the vigor from the coconut tree, the farmers must climb to the top of the palm tree, with great endurance and dexterity. After an incision is made in the stem of the coconut flower, the sap begins to flow. They are usually collected in the morning, sometimes in empty coconut shells or bamboo container. It is then heated in large open vessels until the translucent liquid turns into a thick and concentrated syrup, known as jaggery. During this process, water, lime and organic mangosteen peel are added to prevent rapid fermentation. While fermentation is necessary for the preparation of coconut wine or vinegar, it must be avoided in the production of sugar. The syrup is allowed to cool and set to a solid paste, which, depending on the caramelization that has occurred, can be a very deep brown color. Due to minimal processing and small batch production of this product, taste, color and texture may vary from batch to batch and even between packages. The paste is then transported to a processing center for granulation. The sugar crystals are dry, sieved and carefully inspected, ensuring that only the highest quality product continues to be weighed and, finally, packed. HEALTH BENEFITS Coconut Palm Sugar is considered to be one of the healthiest forms of sweeteners, as it is naturally low on the glycemic index (GI). When you eat carbohydrates (starch and sugar) they are converted into glucose and pumped into the bloodstream. Low glycemic index release glucose more slowly and steadily, and therefore better for controlling blood sugar levels in the body. Coconut palm sugar is rated as GI 35. In comparison, most commercially produced cane sugar has a GI of around 68. This fact makes Coconut Palm sugar a preferable choice for diabetics who must follow a low-glycemic diet. Cancer, obesity and cardiovascular disease have all been linked to excessive consumption of refined and high-glycemic carbohydrates; Coconut Sugar Palm does not carry the same risks of these diseases and thus offers a natural, nutritious alternative to cane sugar and artificial sweeteners alike. In addition, the gradual and controlled release of craving energy curbs between meals and helps maintain a healthy weight. With an abundance of vitamins and 16 amino acids, coconut sugar has a nutrient much richer than all other commercially available sweeteners. Glutamine is the predominant amino acid present in coconut palm sugar and is known to strengthen the immune system and promote tissue repair.
