PUL-BIBER

Known as Aleppo pepper in English and pul biber in Turkish, pul biber is a variety of pepper used as a spice especially in oriental-mediterranean cuisine. The pepper is ripened and then after its seeds are removed, it is grated. The pepper (Aleppo) takes its name from a famous city on the Silk Road in northern Syria, and grows in Turkey and Syria. In its most common form, the pepper is in small skins, milder in flavor and more oily than the usual hot pepper, slightly salty with some sweet, fruity undertones. The pepper does not contain seeds and in cooking it can replace bukovo and paprika.
