The composition of the mixture comes from a Chinese recipe which, according to Chinese philosophy, aims to balance yin and yang in food. With the people of China having spread around the world, the mixture has recently become popular in the western world as well. This particular mixture contains ginger, cinnamon, fennel, cloves and anise. It is ideal for pork, duck, chicken, seafood and also for stir-fried vegetables.
RECIPE
Sauce with a mixture of 5 spices and plums
Makes about 1 ½ cups sauce
Materials:
1 tsp. plant grape seed oil
1 large garlic clove, finely chopped
½ kilo of prunes, large pieces
2 tsp. soy sauce
1 tsp. vinegar
1 tsp. 5 spice mix
Heat the oil in a small saucepan and saute the garlic. Add the vinegar, the plums, the soy sauce and the mixture of 5 spices. Simmer, shaking the pot, until the plums dissolve. The sauce is ready and served with duck, chicken, or tofu.
